Asian pork belly marinade & wok sauce

  • Ingredients

    Pork belly marinade

    180ml soy sauce
    90g brown sugar
    40g honey
    4 stalks spring onions, finely chopped
    9 cloves garlic, finely chopped
    20g salt
    10 black peppercorns, crushed
    180ml toasted sesame oil
    1l pear juice
    6 red peppers, finely chopped (with seeds)


    wok sauce:

    50g shallots
    1 piece red pepper
    1 stalk lemongrass
    Sweat 30g ginger
    300ml oyster sauce
    200ml water
    60ml soy sauce with sugar / salt to taste Strain

  • Preparation

    For the pork belly marinade, mix all the ingredients together. Marinate the pork belly in the marinade and leave to marinate for 24 hours.
