First pat the chicken wings dry with a kitchen towel. Then brush with a little olive oil and sprinkle with BBQ Bob's Alpha Rub. Alternatively, place the wings, a little oil and the Alpha Rub in a food-safe bag and mix everything well.
Marinate in the fridge for a few hours or overnight as desired.
Set the Monolith Grill to approx. 180°C indirect heat with deflector plates. Add smoking pellets to the embers as required and then place the wings on the grill.
The cooking time is approx. 30-45 minutes. The wings are perfect at a core temperature of 85-90°C or when they can be easily separated at the joint.
Finally, mix the wings with the wing sauce in a bowl and place them back on the grill for a few minutes so that the sauce thickens and caramelizes a little.

Tips:
For even crispier wings, you can use a little cornstarch when marinating.
If the wings are separated into upper and lower wings before cooking, they are easier and cleaner to eat. To do this, simply cut the joint with a sharp knife or poultry shears.
If you like, you can also serve the wings with the sauce as a dip. This keeps them a little crispier. Ideally, they should be warmed slightly before serving.
