Run a spoon handle between the bone and the silverskin on the back of the ribs. Remove the silverskin completely. Rub the ribs lightly with olive oil and sprinkle with the rub.
Prepare the Monolith to 200 degrees direct heat.
Then I put the ribs in waves on the spit of the rotisserie. These can then go on the grill.
In the meantime, you can prepare the sauce. Mix the BBQ sauce with the maple syrup. Remove the skin from the cheese and grate the cheese.
Fry the bacon in a pan over a medium heat. You don't need any oil or fat here because the bacon itself already has enough fat. When the fat is out of the bacon and it is nicely browned, remove it and leave to drain on a sheet of kitchen roll. Then cut the bacon into small pieces.
Remove the ribs from the rotisserie after a good 50 - 55 minutes and brush with the BBQ. Then sprinkle the cheese over the ribs.
I then switched the Monolith to indirect heat. This is very easy thanks to the Smart Grid System. I left the ribs on the grill for about 10 minutes. Just until the cheese was nicely melted.
Then the ribs can finally be taken off the grill. Now just spread the crunchy bacon pieces over the ribs and serve with a side dish of your choice.
