500 g minced beef (ideal: shoulder and brisket mixed with 20% fat)

4 or 8 buns
Tartar sauce (mayonnaise with egg & spring onions)
8 slices of bacon
Some red cabbage, cut into strips
Green tomatoes, cut into thin slices

The first step is to season the minced beef with salt and pepper to taste and shape it into balls weighing around 125g. Be careful not to over-season it, as the bacon also adds flavor.
Put a drop of oil in the hamburger press and press the patties. If you don't have a press, simply shape the patties by hand and press a hollow in the middle with a spoon.
Prepare the grill for direct heat to approx. 250 Β°C. Once the grill is ready, sear the patties on both sides (make sure that the core temperature remains at 54 Β°C).
Then grill the bacon and brown both halves of the bun. Next, brush the underside of the bun with sauce and top with the red cabbage. Finally, place the patty, tomato and bacon on top.
