  • THE COFFEE ZONE

    If you know the whole way, you quickly understand how much work and experience goes into such a small coffee or cocoa bean.

    Ghilbert leads us to his favorite spot with a view over the hills of the coffee zone. The perfect place for a little experiment with local ingredients.

    Pork belly lands on the grill. Marinated with panela, the unrefined sugar from sugar cane, a little chili and freshly ground coffee.

  • BOGOTA

    The historic center seems almost quiet. But the real pulse of the city beats in the markets. For example in the Paloquemao market. Fruit, vegetables, colors, smells. Everything at full throttle.

    A few kilometers further on is one of the craziest places in the city: Andrés Carne de Res.

    More stage than restaurant. Everywhere you look, something is flashing, glowing and hanging from the ceiling. And in the middle of it all is a kitchen that works for over 2000 guests every day.

  • CARTAGENA

    Cartagena is located directly on the Caribbean Sea.
    Warm air, relaxed people, life moves at a much slower pace here.

    Of course, a lot of things revolve around food here too. Just with more ease.

    In recent years, an exciting fine dining scene has developed in Cartagena. Right at the forefront: Celele by Jaime Rodríguez.

The Cocora Valley

The Cocora Valley is one of the most spectacular landscapes in the region. Wax palms tower into the sky everywhere, up to 60 meters high. Slender, surreal, almost like something from another world.

If you are already here, you should definitely visit Salento. A small, colorful town in the middle of the mountains. Wooden balconies, cafés, music from open doors.

But Ghilbert has a different goal here. He is looking for a typical dish that absolutely has to be shown off.
