With the MONOLITH Smoke Set, we are expanding our range of accessories with an innovative solution for cold and hot smoking in the ceramic grill. The solid stainless steel attachment fits perfectly on the Smart Grid System and transforms MONOLITH grills in sizes .55 and .66 into powerful smoking ovens. It offers additional height for voluminous pieces - from whole fish to large briskets.

The integrated smoke generator with the smoking auger ensures a constant flow of smoke and enables both gentle hot and even cold smoking. With the power lighter, the smoking flour is ready to go in seconds, while six sturdy hooks provide order and safety when hanging it up.

We have been working on the subject of smoking for many years. This is a very old method of preservation and flavor refinement that is currently being rediscovered by the catering industry and barbecue enthusiasts. We have therefore developed a smoking set for our ceramic barbecues that enables both hot smoking and cold smoking.

It is set up using a stainless steel ring attachment with four plug-in legs that fit perfectly on the Smart Grid System. The solid stainless steel construction offers sufficient height to safely hang larger pieces of meat, cheese or fish as well as butter, salt and herbs. The power igniter included in the scope of delivery ensures that the smoking flour ignites quickly and evenly.

The Smoke Set further expands the possibilities of ceramic barbecuing and offers you unlimited freedom to realize all your creativity and wishes when barbecuing. Naturally in the usual high-end MONOLITH quality.

Smoke Set - Cold smoking

In contrast to hot smoking (50-90 °C), cold smoking is a smoking method in which food is treated in smoke at a low temperature for a longer period of time - typically at below 25 °C, ideally between 15-20 °C.

What happens during cold smoking?

  • Preservation: The smoke has an antibacterial and antioxidant effect, making the food more durable.
  • Flavoring: The smoke gives the product an intense, often subtle smoky flavor.
  • Drying : The food also loses some water during the long smoking process, which further increases its shelf life.

In this sense, cold smoking enriches or enhances the food and also gives it a longer shelf life.
